Breakfast for Dinner

Do you crave to eat certain foods at a non-typical time of day? I do – and normally it’s breakfast for dinner. I’ve learned to embrace that desire and happily my family likes it too.

My favorite solution is to make a batch of pancakes with original Bisquick (for me it’s allergy safe – no dairy or nuts) and if I’m feeling extra energetic I’ll throw together some of my homemade strawberry sauce as I always have frozen berries & berry puree in the freezer.

Instant success for dinner – problem solved, family happy.

HEATHER’S STRAWBERRY SAUCE

4 cups strawberries
1 cup strawberry purée
3 tbsp sugar
2 tsp vanilla extract
2 tsp dry rose petals

  • Mix all ingredients together in a sauce pan
  • Bring to a gentle boil, then turn heat down to a simmer
  • The sauce is ready when the berries have broken down and it has thickened up a bit (to speed up this process you can cut up the berries into bite size pieces)
