Segway Into Spring with Homemade Salsa

I guess it’s time to start moving into spring – happy Spring by the way! Warm weather makes me want homemade salsa, and while you’re at it, throw in some chips. Are you as excited about this change as I am? I am happy to have longer days, warmer weather and sunshine. However the last two days showed winter wants to linger a bit here in San Luis Obispo with more rain. Ooooo ahhhhh – Californian’s obsess with the watery stuff that falls from the sky. Probably because we’re still in a massive drought and it would take a few years of water like we’ve seen this year to replenish the ground water basins. But I digress – it’s SPRING!

So what do you do when the weather is warm and you don’t want to cook dinner? Well… if I’m left on my own without having to feed my family I just nibble all night long. Specifically, I start off with a great bowl of pico and some corn chips.

My favorite brand right now are Mission tortilla chips – the round restaurant style ones. I may not have shared but I’ve been working on adjusting my eating habits after being put on a prescription medication by my endocrinologist to help lower my A1C number. Yeah – so special that one is. However as I don’t have type 2 diabetes yet so I’m really trying hard to make sure that doesn’t happen. As such I’ve been limiting my carb intake – its okay if you want to cry, I sometimes want to, but the longer I’m going in cutting back the carbs the better I’m actually feeling. Go figure. And I’ve been cutting further back on my salt intake.

So Heather how did we get on this tangent of the conversation? Tortilla chips. See? I circle back – honest. I do. The Mission brand chips actually have less sodium than other ready bagged brand that I’ve found so far. If you find yourself needing to cut back even more? Well you’ll probably have to make them yourself at home – either frying on the stove top or baking in the oven. Believe it or not, oven baked corn chips are really tasty!

HEATHER’S HOMEMADE SALSA

2 tomatoes – cored & chopped into a good size chop
½ white onion – chopped
½ bunch cilantro – rough chop
Lemon juice – to taste
Kosher salt – to taste
Garlic powder – to taste

  • Mix the above ingredients together in a bowl. Season with lemon juice, salt & garlic powder to taste.
  • Serve immediately with your favorite chips, veggies or on top of a fish taco.

  • 2 to matoes – cored & chopped into a good size chop
  • ½ white onion – chopped
  • ½ bunch cilantro – rough chop

  • Mix the above ingredients together in a bowl.
  • Season with lemon juice, salt & garlic powder to taste.
  • Serve immediately with your favorite chips, veggies or on top of a fish taco.
