Nectarine & Avocado Salad

This nectarine avocado salad is something I honestly wasn’t sure about heading into dinner. But consider myself pleasantly surprised. This was the tastiest salad I’ve made in a while. Be sure to make this while stone fruits are still ripe for the season.

Not only was this easy and quick to make, this was 100% kid approved – family approved as a matter of fact. There weren’t any leftovers. My family of three went back for seconds and totally polished this off. This will be going into my permanent rotation. I can’t wait to make this again.

I hope you enjoy this as much as we did – I can’t stop thinking about how tasty this was. I can’t believe my husband, the professional pastry chef has been putting up with my healthier eating trend. Happy cooking!
