Easy Curry Chicken

This easy curry chicken is created for those of you that like me, don’t always remember to plan ahead. This is for you that just need to “throw something together” for dinner. No matter how hard we try there will always be nights when it feels like you just can’t get it together.

This is for those nights. Just make sure you keep your pantry stocked with the dry goods in here. The vegetables can certainly be substituted  to fit what you happen to have on hand. This is for you – happy cooking!

Easy Curry Chicken

1 can full fat coconut milk
2-4 cups chicken stock, divided
1 onion chopped
1 ½ tsp mild yellow curry paste
4 tsp curry powder
3 large garlic cloves chopped
3 cups chopped, pre-cooked chicken breast
½ head broccoli, chopped small – tops & stems
1 bag tiny potatoes (grape size), washed & cut in half
Olive oil
Salt & pepper to taste

  • Sautee onion in olive oil
  • When onion is soft, add in coconut milk, stir
  • When coconut milk is blended with onions, add in 2 cups chicken stock
  • Add curry paste, stir to combine
  • Mix in curry powder and garlic clove, mix to combine
  • Add in chopped chicken, broccoli and mini potatoes
  • Stir to combine
  • Bring to boil, reduce to simmer and cook covered until potatoes are cooked through, broccoli stems are soft and chicken is warm through
  • Check every 10 minutes or so, add additional chicken stock as needed to help potatoes cook all the way through
