My heath kick continues and I’ve come up with a multitude of ways to eat tofu. My most recent favorite being my recipe for chorizo flavored tofu so good your guests won’t even care it’s not meat. I’m not kidding. The meat eaters really won’t care that this is not meat. I served it for the hubs, professional chef and meat eater, and he went back for seconds. My favorite way to serve this is in Chilaquiles, but play around. You could put this in tacos, with scrambled eggs in the morning, just about anywhere.

Chorizo Flavored Tofu So Good Your Guests Won’t Even Care It’s Not Meat

1 lb. package firm tofu
¾ large white onion, diced
1 tsp ground cumin
3 tbsp sweet paprika
1 pinch kosher salt
1 tsp garlic powder
½ tsp ground coriander
½ tsp dried oregano, crushed
Pinch ground clove
1/8 tsp fresh ground pepper

Directions
  1. Open tofu package, drain off water
  2. Place tofu in tofu press, twist down top and drain for 30 minutes
  3. Pour off water, twist top down more, drain for another 30 minutes
  4. Remove drained tofu from press
  5. Place tofu in mixing bowl
  6. Crumble tofu into small pieces – I do this by hand
  7. Gently mix in diced onion
  8. Mix in paprika, cumin, salt, garlic powder, coriander, oregano, clove and pepper
  9. Carefully hand mix, you want it to still be in chunky pieces, not blended smooth or pulverized
  10. Use immediately or store in the refrigerator for up to a week
