Gluten & Dairy Free Breakfast Bake

As many members of my family are now eating gluten free due to food sensitivity issues my mom decided everything should be gluten free over the holidays. Not a bad idea as we all enjoy cooking and have been playing around with different gluten/dairy/tree nut free recipes with much success.

This in mind, I decide to tweak some of my existing recipes and make them gluten free. A good part of the preparation for this year was my mom and I experimenting with different brands of gluten free flour. So far we’re most impressed with King Arthur brand. In a little bit I’ll be sharing which products I’m in love with, please note these are affiliate links.

One of the recipes I decided to adjust for gluten and dairy free was a breakfast bake we used to make all the time for our catering customers. This is a lovely dish that you can make in advance and have at room temperature or cold as a left over. It’s like a quiche but crust-less and with a bit of flour in the mix to give it good body.

Gluten & Dairy Free Breakfast Bake

5 eggs – beaten
1 cup plain non-dairy milk, unsweetened if you can find it
3 tbsp. gluten free pancake mix
5 ounces grated dairy free mozzarella
6 ounces chopped deli lunch ham
¼ white onion – diced
2 large handfuls fresh spinach – rough chopped
1 tbsp. no-salt blend
½ tsp. black pepper

Pre-heat oven to 350’
Spray a 9×11 glass baking dish with non-stick spray
Gently fold all ingredients together
Pour into prepped baking dish
Bake 35-50 minutes, when a toothpick comes out clean it is done
Slice and eat immediately, or later
