Slow-Cooker Roast Pork Tenderloin

This recipe for slow-cooker roast pork tenderloin with a honey-balsamic glaze is perfect for fall slow cooker season. I just recently made this for my family and both of them LOVED it. This was a total hit and my family has requested that it stay in regular rotation.

The balsamic glaze is so tasty, I think I might actually make it by itself sometime. We served it over rice, but it would be great over steamed vegetables (broccoli, cauliflower, carrots, snow peas). Try this yourself and see what your family thinks.

Slow-Cooker Roast Pork Tenderloin

1 lb. pork tenderloin
1 tsp. garlic powder
1 tsp. dried parsley
½ tsp. kosher salt
¼ tsp. ground black pepper
¼ tsp. onion powder
¼ tsp. paprika
1/3 cup low sodium chicken stock
2 tbsp. honey
3 tbsp. balsamic vinegar
1 tbsp. ketchup
2 tsp. corn starch

  • If pork tenderloin is too long to fit in the slow cooker, cut in half so two equal length pieces fit into the slow cooker, set aside, do not place in slow cooker yet
  • In a medium bowl, whisk together broth, honey, balsamic vinegar, ketchup and corn starch
  • Pour sauce mixture into bottom of slow cooker
  • In another small bowl mix together garlic, parsley, salt, pepper, onion powder and paprika
  • Rub dry mixture over all sides of the pork tenderloin
  • Once pork is covered with the dry rub, place it in the slow cooker
  • Cover and cook on high for 1 ½ – 2 hours, or on low for 4 hours
  • Pork is done when it reads 150-160’ F with a meat thermometer is placed in the thickest part of the pork
