Aloo Matar

You know I adore Indian food. The practical thing would be for me to go to India and study cooking, but until then I will make do with practicing in my own kitchen. I have ordered aloo matar from a local Indian restaurant, loved it so much, I taught myself how to cook it at home.

Aloo Matar

3 small russet potatoes, washed, cubed and boiled
2 cups frozen peas
1 pasilla pepper, seeded and minced
1 medium white onion, diced
2 tsp. garlic paste
2 tsp. ginger paste
2 x 15 ounce cans tomato sauce
¼ cup olive oil
2 tsp cumin seeds
2 bay leaves
2 ½ tsp turmeric
1 tsp. garam masala
½ tsp. paprika
2 tsp. curry powder
2 tbsp. coriander powder
1 tsp. kosher salt
1 tsp. lemon juice

  • Heat oil over medium heat
  • Add cumin seed and bay leaves
  • When seeds start to pop, add onion, garlic and ginger paste
  • Saute until oil separates
  • Add half tomato sauce
  • Mix in turmeric, garam masala, paprika, coriander, curry powder
  • Stir fry until oil separates
  • Add peas, potato, pasilla pepper, remainder of the tomato sauce, kosher salt and lemon juice
  • Heat through
  • Remove bay leaf
  • Serve over jasmine rice or with pita bread, naan or gluten free tortillas

Leftovers

This dish is fabulous left over. I like to toast up my favorite gluten free bread and eat this on top. Nom nom.
