Slow Cooker Mediterranean Chicken

Ingredients
  • 1 medium butternut squash, peeled & cut into 2" pieces
  • 1 red bell pepper, chopped into large pieces
  • 4 boneless, skinless chicken breasts cut into 3 pieces each
  • 1 x 14.5 ounce can diced tomatoes (with juices)
  • 1 cup salsa
  • ½ cup gold raisins
  • ¼ tsp cinnamon
  • ¼ tsp cumin
Instructions
  1. Layer squash, bell pepper and chicken in crock pot
  2. Mix tomatoes, salsa, gold raisins, cinnamon & cumin together
  3. Pour over other ingredients in pot
  4. Cover and cook on low 7 hours, or until juice of chicken is no longer pink and squash is tender
  5. Serve over couscous or brown rice
