Ingredients
  • 3 small russet potatoes, washed, cubed and boiled
  • 2 cups frozen peas
  • 1 pasilla pepper, seeded and minced
  • 1 medium white onion, diced
  • 2 tsp. garlic paste
  • 2 tsp. ginger paste
  • 2 x 15 ounce cans tomato sauce
  • ¼ cup olive oil
  • 2 tsp cumin seeds
  • 2 bay leaves
  • 2 ½ tsp turmeric
  • 1 tsp. garam masala
  • ½ tsp. paprika
  • 2 tsp. curry powder
  • 2 tbsp. coriander powder
  • 1 tsp. kosher salt
  • 1 tsp. lemon juice
Instructions
  1. Heat oil over medium heat
  2. Add cumin seed and bay leaves
  3. When seeds start to pop, add onion, garlic and ginger paste
  4. Saute until oil separates
  5. Add half tomato sauce
  6. Mix in turmeric, garam masala, paprika, coriander, curry powder
  7. Stir fry until oil separates
  8. Add peas, potato, pasilla pepper, remainder of the tomato sauce, kosher salt and lemon juice
  9. Heat through
  10. Remove bay leaf
  11. Serve over jasmine rice or with pita bread, naan or gluten free tortillas
