Hawaiian Sweet Potato Salad
  • 1 ½ sweet potatoes, peeled and cut into very large chunks tsp. grated fresh ginger
  • 1 ½ tsp. fresh lime juice
  • ¼ cup plain, unsweetened dairy-free yogurt
  • ⅛ cup mayonnaise
  • 1 tsp Dijon mustard
  • 1 ½ tsp. sweet curry powder
  • ¼ tsp. agave nectar, or to taste
  • ½ cup celery, diced
  • ¼ cup red bell pepper, diced
  • Black pepper to taste
  1. Cook potatoes until done and set aside to cool while the rest of the salad is assembled
  2. In a large mixing bowl, whisk ginger, lime juice, dairy-free yogurt, mayonnaise, mustard and curry powder
  3. Taste and add agave to taste
  4. Add sauce to diced celery and red bell pepper
  5. Gently fold in cooked sweet potato
  6. Season with fresh black pepper
  7. Refrigerate salad for a few hours
  8. Serve chilled
