Apple Cranberry Bars

Ingredients
  • 6 tbsp. dairy-free margarine, softened
  • ¾ cup packed light brown sugar
  • 2 eggs
  • 2 tbsp. honey
  • 1 tsp. vanilla
  • 1 cup gluten-free measure-for-measure flour
  • ⅔ cup quick cook oats
  • ¾ tsp. baking powder
  • ½ tsp. baking soda
  • ¾ tsp. allspice
  • 1 cup finely chopped peeled apple
  • ½ cup dried cranberries, chopped
Instructions
  1. Pre-heat oven to 350’F
  2. Spray a 9” square pan with non-stick spray
  3. Beat dairy-free margarine and sugar until blended well
  4. Beat in eggs, honey, and vanilla
  5. Mix in gluten-free flour, baking powder, baking soda, and allspice
  6. After mixing fully, gently stir in apples and cranberries
  7. Pour batter into prepared pan
  8. Bake 35-40 minutes until a wooden pick inserted into the center comes out clean
  9. Remove from oven, cool on wire rack
  10. When cool, slice
  11. Sprinkle with powdered sugar before serving (optional)
