Dairy Free Taco Casserole
  • 1 package ground turkey
  • 1 cup chicken stock
  • ¼ cup Heather’s homemade taco seasoning, or 1 packet store bought seasoning mix
  • 1 red onion, chopped
  • 1-2 cups frozen white corn
  • 2 cans re-fried beans
  • 2 cups dairy-free cheddar cheese shreds
  • ½ cup diced tomato
  • ½ cup sliced black olives
  • Extra thick gluten-free corn tortilla chips
  • Dairy-free sour cream
  1. Pre-heat oven to 350’F
  2. Saute ground turkey
  3. Once cooked, add in onion, and keep cooking until onion is cooked through
  4. Add taco seasoning and chicken stock
  5. Stir until mixed
  6. Add corn and cook a few more minutes until stock is completely absorbed
  7. Spray a 9x13 glass baking dish with non-stick spray
  8. Spread re-fried beans on the bottom of the casserole
  9. Top with ½ of the dairy-free cheese
  10. Finally top with ground turkey mixture
  11. Cover with foil, cook 30-40 minutes
  12. Remove foil, mixture will be bubbly in the casserole
  13. Top with remaining dairy-free cheese, tomato, and olives
  14. Tuck gluten-free tortilla chips down the sides, so they stick up from the casserole dish
  15. Return to the oven and cook for 10 more minutes or until the cheese is melted
  16. Remove from oven
  17. Let rest a few minutes
  18. Serve with a spoon of dairy-free sour cream on top & extra chips on the side
