Garlic White Beans
  • 2 lbs. carne asada
  • 30 ounces white beans, drained and rinsed
  • 4 Roma tomatoes, chopped
  • ¾ red onion, chopped
  • 1 tsp. fresh garlic, crushed (I use a garlic press)
  • 3 tsp. Italian seasoning
  • 1 cup chicken stock
  • 3 cups loose packed, chopped spinach
  • Olive oil
  • Kosher salt & black pepper to taste
  1. Heat oil in a large non-stick skillet over medium heat until hot.
  2. Cook carne asada until browned evenly, pour off drippings
  3. Add onion, tomato, salt and pepper
  4. Bring to a boil
  5. Reduce heat, over tightly and simmer 20 minutes or until steak is fork-tender
  6. Remove steaks and keep warm
  7. Stir beans into cooking liquid, bring to a boil
  8. Reduce heat and cook 7-10 minutes or until sauce is thickened, stir frequently
  9. Mix in spinach, remove from heat
  10. Let stand 1 minute
  11. Serve bean mixture with cooked carne asada
