Pre-heat oven to 350'
Grease 2-3 jelly roll pans (baking sheets w/ edges)
Mix oats, wheat germ and coconut in a large bowl
In a small saucepan, mix honey, oil, vanilla and spices
Cook until honey is clear and smooth
Add to oat mixture and blend well
Spread evenly onto baking sheets
Bake 15 minutes or until golden
Remove from oven and let cool
Once cool, mix in raisins & coconut
Store in an airtight container
