Family Friendly Hawaiian Fried Rice

Ingredients
  

  • INGREDIENTS FOR COOKED RICE
  • 2 cups long grain rice
  • 4 cups water
  • 2 tbsp non-dairy butter
  • INGREDIENTS FOR FRIED RICE
  • Cooked rice from above
  • ½ lb. turkey bacon cut into ½” pieces
  • Olive oil
  • 1 x 12 ounce can low sodium spam – cut into ¼” pieces
  • 6 cloves garlic minced
  • 3 medium carrot peeled and diced
  • 4 large whole eggs beaten
  • 1 ½ cup frozen green peas
  • ¼ cup low sodium soy sauce
  • 4 green onions diced – white & green parts

Instructions
 

  • TO MAKE RICE
  • Add rice, water & non-dairy butter to a medium sauce pot
  • Bring to a boil
  • Reduce heat to low, cover and cook 20 minutes or until all the water is absorbed
  • TO MAKE FRIED RICE
  • Fry turkey bacon in a large pan with a little olive oil until crispy
  • Push crispy turkey bacon to the side of the pan
  • Add spam and sauté until it starts to brown
  • Remove bacon & spam from pan, set aside for later
  • Add garlic, cook a few minutes on medium, do not brown
  • Mix in diced carrot & peas, sauté until carrots are al dente
  • Move vegetables to side, add in beaten eggs
  • Stir egg around until it scrambles, sprinkle with pepper & salt to taste
  • When egg is cooked, mix vegetables into egg
  • Mix in bacon & spam, gently combine
  • Add cooked rice, stir gently
  • Pour in soy sauce and mix
  • Top with green onion
  • Serve warm
