Watermelon Jicama Salad

This refreshing summer salad pairs with your favorite chips, or with grilled fish.

Ingredients
  

  • 2.5 cups seedless watermelon, diced
  • 1.5 cups jicama, peeled and diced
  • 3 tbsp/each red onion, fresh mint, pasilla chili (chopped)
  • 1.5 tsp fresh lime juice
  • kosher salt - to taste

Instructions
 

  • Gently toss all ingredients together. Serve immediately with your favorite chips, or over grilled fish
