Easy Curry Chicken

Ingredients
  

  • 1 can full fat coconut milk
  • 2-4 cups chicken stock divided
  • 1 onion chopped
  • 1 ½ tsp mild yellow curry paste
  • 4 tsp curry powder
  • 3 large garlic cloves chopped
  • 3 cups chopped pre-cooked chicken breast
  • ½ head broccoli chopped small – tops & stems
  • 1 bag tiny potatoes grape size, washed & cut in half
  • Olive oil
  • Salt & pepper to taste

Instructions
 

  • Sautee onion in olive oil
  • When onion is soft, add in coconut milk, stir
  • When coconut milk is blended with onions, add in 2 cups chicken stock
  • Add curry paste, stir to combine
  • Mix in curry powder and garlic clove, mix to combine
  • Add in chopped chicken, broccoli and mini potatoes
  • Stir to combine
  • Bring to boil, reduce to simmer and cook covered until potatoes are cooked through, broccoli stems are soft and chicken is warm through
  • Check every 10 minutes or so, add additional chicken stock as needed to help potatoes cook all the way through
