Healthy Eating Chicken Burrito Bowls

Ingredients
  

  • FOR CHICKEN
  • 1 ½ lbs. chicken thighs skin off
  • 1 tsp. kosher salt
  • 1 ½ cup chunky salsa
  • 1 cup black beans drained and rinsed
  • ½ tsp. garlic powder
  • 1 tsp. cumin
  • FOR BOWLS
  • 2 cups cooked brown rice
  • 2 cups shredded greens I really like iceburg lettuce mixed with chopped Napa cabbage and spinach
  • Pico de gallo
  • Sliced olives
  • Sliced jalapenos
  • Guacamole
  • Cilantro chopped – for garnish

Instructions
 

  • FOR CHICKEN
  • Toss in slow cooker and cook for 4 hours on high, or 8 hours on low
  • Shred and reduce as needed
  • FOR BOWLS
  • Assemble with rice on bottom, followed by greens, chicken, pico, olives, jalapenos, guacamole and cilantro
  • You can add shredded cheese if you like
