Peparkaker Cookie: VIRTUAL COOKIE SWAP

Ingredients
  

  • 2/3 cups dairy free margarine
  • 2 cups flour
  • 1 tsp. baking soda
  • 1 tsp. ginger
  • 1/3 cup molasses
  • 1 tsp. cinnamon
  • 1 tsp. cloves

Instructions
 

  • Cream together dairy free margarine & sugar
  • Add eggs, then molasses, beating well after each addition, until light and fluffy
  • Sift all dry ingredients together and add to first mixture, beating well
  • Store the stiff dough with refrigerator for several hours
  • Roll out 1/2 the dough at a time
  • Roll thin, you want it to be 1/8" thick - the thinner the dough the crisper the cooking
  • Bake on un-greased baking sheet at 350’ for 5-8 minutes

Notes

Glaze (optional):
1 ½ cups confectioner sugar
2-3 tbsp. dairy free milk
1 tsp. vanilla
