Gem Cakes

Ingredients
  

  • This makes a double batch
  • ½ cup dairy-free margarine
  • ½ cup sugar
  • 1 cup gluten-free flour
  • 1 tsp. baking soda
  • 1 tsp. baking powder
  • 1 tsp. vanilla extract
  • 2 eggs
  • 6 tbsp. plain unsweetened dairy-free milk

Instructions
 

  • Pre-heat oven to 350’F
  • Warm cast iron pan in oven
  • Melt dairy-free margarine, mix in sugar, flour and all other ingredients
  • Stir to combine
  • When cast iron pan is warm, melt a little bit of dairy-free margarine in each compartment
  • Then pour in batter by the tablespoonful
  • When all compartments are filled, place pan in oven
  • Bake 10 minutes, then check, if not cooked all the way through, cook another 10 minutes
