Pre-heat oven to 350’F
Spray a 9” square pan with non-stick spray
Beat dairy-free margarine and sugar until blended well
Beat in eggs, honey, and vanilla
Mix in gluten-free flour, baking powder, baking soda, and allspice
After mixing fully, gently stir in apples and cranberries
Pour batter into prepared pan
Bake 35-40 minutes until a wooden pick inserted into the center comes out clean
Remove from oven, cool on wire rack
When cool, slice
Sprinkle with powdered sugar before serving (optional)
