Easy BBQ Pulled Pork

Ingredients
  

  • 1 tbsp. olive oil
  • 1 ½ lbs. boneless pork loin trimmed of visible fat
  • 1 medium white onion chopped (1/2 cup)
  • 2/3 cup ketchup
  • 1 tbsp. apple cider vinegar
  • 1 tbsp. molasses
  • 2 tsp. packed brown sugar
  • 2 tsp. mustard powder
  • 1 ½ tsp. garlic powder
  • 1 tsp. Worcestershire sauce
  • ¼ tsp. black pepper
  • 1 ½ cup chicken stock if cooking in a slow cooker use half the stock

Instructions
 

  • Heat oil in medium stock pot on medium-high heat
  • Add pork loin, brown, turning occasionally
  • Add onion, ketchup, vinegar, molasses, brown sugar, mustard powder, Worcestershire sauce, black pepper and broth
  • Stir to combine and bring to a boil
  • Reduce heat to low, cover and simmer
  • Stir occasionally – cook 1 ½ hours
  • Uncover and simmer an additional 10 minutes or until the sauce has thickened slightly
  • Pork will be tender and pull apart with a fork
  • Remove from heat
  • Shred pork with forks and serve
