Aloo Matar

Ingredients
  

  • 3 small russet potatoes washed, cubed and boiled
  • 2 cups frozen peas
  • 1 pasilla pepper seeded and minced
  • 1 medium white onion diced
  • 2 tsp. garlic paste
  • 2 tsp. ginger paste
  • 2 x 15 ounce cans tomato sauce
  • ¼ cup olive oil
  • 2 tsp cumin seeds
  • 2 bay leaves
  • 2 ½ tsp turmeric
  • 1 tsp. garam masala
  • ½ tsp. paprika
  • 2 tsp. curry powder
  • 2 tbsp. coriander powder
  • 1 tsp. kosher salt
  • 1 tsp. lemon juice

Instructions
 

  • Heat oil over medium heat
  • Add cumin seed and bay leaves
  • When seeds start to pop, add onion, garlic and ginger paste
  • Saute until oil separates
  • Add half tomato sauce
  • Mix in turmeric, garam masala, paprika, coriander, curry powder
  • Stir fry until oil separates
  • Add peas, potato, pasilla pepper, remainder of the tomato sauce, kosher salt and lemon juice
  • Heat through
  • Remove bay leaf
  • Serve over jasmine rice or with pita bread, naan or gluten free tortillas
