Dairy Free Italian Fried Dough

Ingredients
  

  • 2 eggs
  • ½ cup sugar
  • ¼ cup soy milk
  • 1 tsp cinnamon
  • 3 tsp baking powder
  • 2 cups white flour
  • oil for frying

Instructions
 

  • With electric mixer, beat eggs & sugar until blended
  • Add soy milk, cinnamon, baking powder and flour and mix until smooth
  • Cover with plastic wrap and let batter rest at room temperature for 15-20 minutes
  • Heat 3" oil in saucepan over medium heat (or use a deep fryer if you have one)
  • Drop 3/4 tsp of batter in oil and fry until golden on all sides - about 3 minutes
  • Remove with slotted spoon onto paper towels, then roll in sugar
  • Good warm or cool
