Combine all but mushrooms in an enameled skillet, bring to a boil over medium-high heat
Reduce heat, cover and simmer 15 minutes
Strain marinate and return to skilled
Bring to simmer over low heat
Add mushrooms into marinade and simmer for 5 minutes, turning mushrooms occasionally
Let mushrooms cool in marinade
Serve at room temperature, or after cooled – refrigerate and serve cold.
