Easy Mexican Chicken

Ingredients
  

  • 6 skinless boneless chicken breasts
  • Olive oil
  • 2 tsp cumin
  • 1 tsp kosher Salt
  • 1 tsp fresh black pepper
  • 1 package taco seasoning or jump HERE for my homemade variety

Instructions
 

  • Pre-heat oven to 350’F
  • Place chicken breasts in greased baking dish
  • Drizzle with olive oil
  • Use pastry brush or your fingers to make sure chicken is completely covered with oil
  • Mix cumin, salt & pepper together
  • Sprinkle evenly over chicken breasts
  • Massage spices into chicken
  • Bake uncovered in oven for 30 minutes, or until meat thermometer reads 165’
  • Remove chicken from oven & shred with forks
  • Mix taco seasoning into shredded chicken, following package directions
  • Serve with your favorite taco fixings
