Stuffed Zucchini Boats with Chicken

Summer loving recipe for stuffed zucchini boats with chicken.
- 2 cups tomato sauce (with basil, garlic and oregano) – divided
- 4 medium zucchini
- 2 ½ cups shredded cooked chicken
- 1 cup DF mozzarella or provolone cheese
- 1 tbsp. chopped basil
Pre-heat oven to 375’FSpray a 9x13 glass dish with non-stick spraySpread ½ of the tomato sauce on the bottom of the panTrim zucchini and slice each in halfRemove flesh from center of each and chop upPlace zucchini halves in a single layer on the prepared dishHeat oil in a large saute pan over medium-high heatCook zucchini until soft, about 3 minutesMix in tomato sauce and chicken, heat until warm throughSpoon mixture into zucchini boatsCover with foil and bake 30 minutesRemove from oven, sprinkle with DF cheeseReturn to oven for 5 minutes or until cheese is meltedRemove from oven and garnish with basil NOTE: can be made in advance, add an additional 10 minutes to cooking time if taking from the refrigeratorThis was delicious and easy to make.
