Stuffed Zucchini Boats with Chicken

Who here has planted zucchini in their garden this summer? Who needs additional recipes to cook off all the zucchini they’ve grown? Glad to hear I’m not alone! I really enjoy making these stuffed zucchini boats with chicken. But since my family LOVES zucchini it’s not a big stretch to come up with things to do with them.

This recipe uses cooked chicken, but you can use ground turkey, sausage, and any other favorite protein – you can also make this vegetarian. Happy cooking!

2 cups tomato sauce (with basil, garlic and oregano) – divided

4 medium zucchini

2 ½ cups shredded cooked chicken

1 cup DF mozzarella or provolone cheese

1 tbsp. chopped basil

  • Pre-heat oven to 375’F
  • Spray a 9×13 glass dish with non-stick spray
  • Spread ½ of the tomato sauce on the bottom of the pan
  • Trim zucchini and slice each in half
  • Remove flesh from center of each and chop up
  • Place zucchini halves in a single layer on the prepared dish
  • Heat oil in a large saute pan over medium-high heat
  • Cook zucchini until soft, about 3 minutes
  • Mix in tomato sauce and chicken, heat until warm through
  • Spoon mixture into zucchini boats
  • Cover with foil and bake 30 minutes
  • Remove from oven, sprinkle with DF cheese
  • Return to oven for 5 minutes or until cheese is melted
  • Remove from oven and garnish with basil

NOTE: can be made in advance, add an additional 10 minutes to cooking time if taking from the refrigerator

This was delicious and easy to make. Family approved.
