Fresh Fruit Crumble

My family loves summer when all the stone fruit is fresh & ripe ready to eat right off the tree. You can make this fresh fruit crumble during the summer with your favorite fresh fruit. But the beauty of this recipe is you can make it year round just substitute the fresh fruit for equal amount of frozen fruit. Happy cooking!

Filling:

¾ cup sugar

6 tbsp. tapioca flour

5-6 cups fresh fruit, I used plums

1 tbsp. fresh lemon juice

1 tsp. vanilla extract

Crumble topping:

3 cups oats

¾ cups loose light brown sugar

¼ cup sugar

1/3 cup + coconut oil

  • Pre-heat oven to 350’F
  • Spray 9×13 glass pan with non-stick spray
  • Whisk together sugar and tapioca flour
  • Add fruit, lemon juice and vanilla
  • Pour into prepared glass pan
  • Mix topping ingredients together until crumbly
  • Sprinkle topping over fruit in pan
  • Bake 45 minutes or until topping is golden brown

The fresh fruit crumble from sloCooking is a tasty dessert to make with fresh summer stone fruit. But you can make it year round with your favorite frozen fruit!

Ingredients
  

  • FILLING: ¾ cup sugar
  • 6 tbsp. tapioca flour
  • 5-6 cups fresh fruit, I used plums
  • 1 tbsp. fresh lemon juice
  • 1 tsp. vanilla extract
  • CRUMBLE: 3 cups oats
  • ¾ cups loose light brown sugar
  • ¼ cup sugar
  • 1/3 cup + coconut oil

Instructions
 

  • Pre-heat oven to 350’F
    Spray 9x13 glass pan with non-stick spray
    Whisk together sugar and tapioca flour
    Add fruit, lemon juice and vanilla
    Pour into prepared glass pan
    Mix topping ingredients together until crumbly
