Pre-heat oven to 375’F
Bake potatoes until soft, 50-60 minutes
While potatoes cook, steam spinach until wilted
Cool spinach, drain excess water and chop
Remove potatoes from oven
Cut top inch off the length of each potato
Scoop out insides, and place in a bowl
Add spinach, sausage, dairy free milk, salt and cayenne
Place potatoes on a rimmed baking sheet
Refill potatoes with stuffing mixture
Top with dairy-free cheese
Place baking sheet with potatoes in oven
Bake about 20 minutes, or until hot and cheese is melting
Alternatively - you can cook the sausage separate and serve it on the side
