Healthy Twice Baked Potato

Ingredients
  

  • 4 each medium Russet potatoes
  • 2 ounces chicken sausage, chopped small
  • 2 cups raw spinach (or cooked broccoli)
  • 1/4 cup unsweetened plain flax milk (or your favorite unsweetened plain dairy-free milk)
  • 1/8 tsp. kosher salt
  • 1 cup dairy-free mozzarella or provolone shreds
  • Pinch cayenne

Instructions
 

  • Pre-heat oven to 375’F
  • Bake potatoes until soft, 50-60 minutes
  • While potatoes cook, steam spinach until wilted
  • Cool spinach, drain excess water and chop
  • Remove potatoes from oven
  • Cut top inch off the length of each potato
  • Scoop out insides, and place in a bowl
  • Add spinach, sausage, dairy free milk, salt and cayenne
  • Place potatoes on a rimmed baking sheet
  • Refill potatoes with stuffing mixture
  • Top with dairy-free cheese
  • Place baking sheet with potatoes in oven
  • Bake about 20 minutes, or until hot and cheese is melting
  • Alternatively - you can cook the sausage separate and serve it on the side
