Healthy Twice Baked Potato

I’m a sucker for any dinner revolving around a baked potato. I hope you enjoy this recipe for a healthy twice baked potato. These are easy to make, kid approved, and family dinner friendly.

Healthy Twice Baked PotatoHealthy twice baked potato by sloCooking

4 medium Russet potatoes

2 ounces chicken sausage, chopped small

2 cups raw spinach (or cooked broccoli pieces)

¼ cup unsweetened plain flax milk (or your favorite unsweetened plain dairy-free milk)

1/8 tsp. kosher salt

Pinch cayenne

1 cup dairy free mozzarella or provolone shreds

  • Pre-heat oven to 375’F
  • Bake potatoes until soft, 50-60 minutes
  • While potatoes cook, steam spinach until wilted
  • Cool spinach, drain excess water and chop
  • Remove potatoes from oven
  • Cut top inch off the length of each potato
  • Scoop out insides, and place in a bowl
  • Add spinach, sausage, dairy free milk, salt and cayenne
  • Place potatoes on a rimmed baking sheet
  • Refill potatoes with stuffing mixture
  • Top with dairy free cheese
  • Place baking sheet with potatoes in oven
  • Bake about 20 minutes, or until hot and cheese is melting
  • Alternatively – you can cook the sausage separate and serve it on the side
