Orzo and Chicken Salad

Ingredients
  

  • 1 package gluten-free orzo, cooked per package directions
  • 2 cups Left over chicken, cut into 1” cubes
  • 1 each 1 Persian cucumber, sliced
  • Sun-dried tomato (drain off oil), to taste
  • Sliced red onion, to taste
  • Flat leaf parsley, chopped
  • Italian salad dressing, to taste

Instructions
 

  • Cook orzo following package directions
  • When pasta is cooked, rinse in cool water, drain and place in a large bowl
  • Add chicken, Persian cucumber, sun-dried tomato,red onion, parsley and dressing
  • Stir to combine
  •  Cover and let chill until you are ready to eat
