Microwave Brittle

Ingredients
  

  • 1 cup sugar
  • ½ cup light corn syrup
  • 1 cup roasted/salted nuts your choice - you can also use raw nuts if you don't want all the salt
  • 1 tsp. dairy free margarine
  • 1 tsp. vanilla
  • 1 tsp. baking soda

Instructions
 

  • Grease a baking sheet
  • In a 1 ½ quart microwave safe dish (I use a Pyrex) combine sugar & corn syrup
  • Cook on HIGH 4 minutes
  • Stir in peanuts
  • Cook on HIGH 3-5 minutes or until peanuts are light brown
  • Stir in dairy free margarine & vanilla, blend well
  • Cook on HIGH 1-2 minutes
  • Add baking soda and stir gently until light and foamy
  • Pour onto greased baking sheet
  • Let cool 30 minutes then break into pieces
  • Makes about 1 pound
