Sift gluten-free flour and baking powder and set aside
Mix dairy-free margarine and sugar until light and fluffy
Mix in vanilla
Add in flour mixture
Refrigerate dough until it is easy to handle
Pre-heat oven to 350’F
On a lightly floured surface roll dough ¼-inch thick
Cut into triangles or use cutters
Place 1-inch apart on ungreased baking sheets
Bake 25 minutes or until done
Make sure cookies do not brown
Remove from oven and cool on wire racks
