Old Fashioned Shortbread

A few years ago I was asked to cook some shortbread from a vintage cookbook for a fundraiser at the local women’s club. These old fashioned shortbread cookies were what I made. It was interesting to cook something from a really old cookbook. In the past they were not so big on directions, the way we are in modern times. I have given these a gluten-free dairy-free tweak. Old Fashioned Shortbread

1 lb. dairy-free margarine
4 cups gluten-free measure-for-measure flour
1 cup powdered sugar
½ tsp. baking powder
½ tsp. vanilla

  • Sift gluten-free flour and baking powder and set aside
  • Mix dairy-free margarine and sugar until light and fluffy
  • Mix in vanilla
  • Add in flour mixture
  • Refrigerate dough until it is easy to handle
  • Pre-heat oven to 350’F
  • On a lightly floured surface roll dough ¼-inch thick
  • Cut into triangles
  • Place 1-inch apart on ungreased baking sheets
  • Bake 25 minutes or until done
  • Make sure cookies do not brown
  • Remove from oven and cool on wire racks
