Apple Berry Crisp

One can never have too many apple baked goods, especially in the fall when there are lots of get-togethers and family meals. If you are like me you love to entertain but do not want to spend hours slaving in the kitchen which is why I love this apple berry crisp.

Want to know a secret? Your guests wont care if you spent hours or minutes in the kitchen. Your guests wont care if you slaved over a hot stove making the dish or if you snuck out the store and brought something home to either reheat or just to platter up. What your guests care about is that they are made to feel welcome. What your guests care about is that they have a good time. So why I ask you, do you spend hours in the kitchen during the busy holiday season. This apple berry crisp is an easy recipe to cook when you are in a rush. It goes together quickly and is very tasty too.

Apple Berry Crisp

6 green apples, skinned, cored and diced
2 cups frozen blackberries, thawed and dried
2 cups frozen blueberries, thawed and dried
6 tbsp. tapioca powder
1 tbsp. cinnamon
1 tsp. allspice
½ tsp. clove
Juice of 1 lemon
Zest of 1 lemon
4 cups gluten-free oats
1 cup light brown sugar
1 tbsp. vanilla extract

  • Pre-heat oven to 350’F
  • Place apples and berries in a 9×13 glass pan
  • Sprinkle fruit with cinnamon, allspice, clove and lemon juice
  • In a bowl combine oats, brown sugar, vanilla, lemon zest mix to combine
  • Pour over fruit mixture
  • Bake for 30 minutes
  • Serve warm
