Anise Cookie: VIRTUAL COOKIE SWAP

Ingredients
  

  • 3 eggs
  • 1 cup sugar
  • 1 tbsp. anise seed rolled fine – using a rolling pin
  • 1 ½ - 2 gluten-free measure for measure flour
  • 1 tsp. baking powder

Instructions
 

  • Beat eggs until very light
  • Add sugar and beat some more
  • Add sifted gluten-free flour, baking powder and anise seeds
  • Beat again
  • Drop by teaspoon full greased baking pan, about 1 inch apart (they will spread)
  • Let stand 10 hours to overnight at room temperature before baking
  • Next day - Preheat oven to 325-350’F (depending on your oven temperatures)
  • Bake at 325-350’F oven until light yellow, about 5 minutes
