Anise Cookie: VIRTUAL COOKIE SWAP

Here is another recipe my mother got from her grandmother.  My Italian great grandmother Albigese used to bake this Anise Cookie when my mom would visit Pompton Lakes (PL) as a child. I hope you enjoy baking these  with your loved ones and that you make happy memories that will live through the generations.

ANISE COOKIE

3 eggs
1 cup sugar
1 tbsp. anise seed (rolled fine – using a rolling pin)
1 ½ – 2 gluten-free measure for measure flour
1 tsp. baking powder

Beat eggs until very light
Add sugar and beat some more
Add sifted gluten-free flour, baking powder and anise seeds
Beat again
Drop by teaspoon full greased baking pan, about 1 inch apart (they will spread)
Let stand 10 hours to overnight at room temperature before baking
Next day – Preheat oven to 325-350’F (depending on your oven temperatures)
Bake at 325-350’F oven until light yellow, about 5 minutes
