I’ve been experimenting with various recipes over the years, looking for healthier snack alternatives to things you can find at the store. This is my take on a recipe for a chunky bean dip. You can use this with chips, veggies, or put a dab on a salad – it’s that good. My family enjoys this recipe and I like to use it when we have friends over. This is the kind of recipe that makes you look like you’ve spent a long time in the kitchen, when in fact you haven’t. Win – win!
HEATHER’S CHUNKY BEAN DIP
1 – 15oz can white beans, drained & rinsed
2 tbsp lemon oil
1/3 c dry parsley flakes
1 tsp garlic powder
Kosher salt
Pepper
1 tbsp lime juice
- Place garlic powder, parsley flakes & lemon oil in blender or food processor
- Process about 20 seconds
- Add beans, lime juice, salt & pepper to taste
- Blend about 20 more seconds – it will form a thick, slightly chunky puree
- Transfer to serving bowl & enjoy with your favorite chips or vegetable slices
