Marinated mushrooms are an easy appetizer to make. Below is my recipe that I have included in “recipe tree” mailings.
Have you ever participated in one? Think chain letter, but instead of sending money, you’re sending a recipe to a few people and hope to get at least one back in return. Unfortunately I have never received reciprocal recipes. However I have sent this one out quite a few times.

MARINATED MUSHROOMS
2/3 c olive oil
½ c water
Juice of 2 lemons
1 bay leaf
2 cloves garlic, bruised
6 white pepper corns
½ tsp salt
1 lb fresh button mushrooms
- Combine all but mushrooms in an enameled skillet, bring to a boil over medium-high heat
- Reduce heat, cover and simmer 15 minutes
- Strain marinate and return to skilled
- Bring to simmer over low heat
- Add mushrooms into marinade and simmer for 5 minutes, turning mushrooms occasionally
- Let mushrooms cool in marinade
- Serve at room temperature, or after cooled – refrigerate and serve cold.
