Easy Orzo & Chicken Salad

Being a busy mom makes me want to hit the easy button – a lot. True confession, but really – a lot. So when I came up with this recipe for this easy orzo & chicken salad I just had to share. I know you want easy, kid approved, family friendly recipes just like I do.

Since I know you’re busy and the last thing you want to do after a long day of work is take a long time cooking dinner, especially during summer months, when the weather is warm and it’s staying lighter later here’s a crowd pleasing recipe that is ready in a flash.

If you’re the type to plan ahead, you can make the chicken yourself in advance, and cook off the pasta the night before to make assembling this even faster.

This was my very own creation and is EASY! I hope you enjoy this salad recipe. I’m going to try and post up more since we’re in the middle of summer and if you’re like me you hate slaving in a hot kitchen when the weather is nice outside.

EASY ORZO & CHICKEN SALAD

1 package orzo pasta, cooked
2-3 cups cooked chicken, cut into 1″ cubes (don’t have left over? Grab a rotisserie one on the way home from work)
1 sliced cucumber
½ cup sliced sun-dried tomatoes (drained of oil)
½ red onion, sliced (to taste)
¼ cup flat leaf parsley, chopped
Italian salad dressing, use your favorite store brand or make it from scratch

Mix all together, and enjoy!

  • 1 package orzo pasta cooked
