School Lunch Ideas… What’s for Lunch

School lunch ideas… I entered the ranks of a mom with a kid in school many years ago and there is one thing always on my mind – what’s for lunch. Not only do I need to figure out what to make for school lunch but aspire to:

  1. make it fun,
  2. have it be good for the kid, and
  3. make sure it’s going to be eaten.

Full disclosure though…

A few years ago I broke my Achilles tendon on the kiddo’s 1st day of school. With that accident things at home changed drastically and rapidly.  As I was physically unable stand, was on bed rest for a full six weeks, and unable to make her lunch, she suddenly had to make her own. Now the hubs said it was about time and didn’t feel bad that she was doing this. I on the other hand was racked with mom guilt. You know what I’m talking about.

The hubs was what would be considered an emancipated minor. He had a lot of responsibility put on his shoulders at a very young age. I on the other hand, didn’t start doing things for myself until junior high. Different environments, different ways of looking at things.

That being said, I’ve come across a couple of websites that offer great suggestions. Below are a list of websites for your reference. I haven’t tried any of these recipes yet, just wanted to get them out there for your back-to-school planning. I don’t know about you, but I’m already starting to stock up on snack items and other things I’ll be needing for fast, family friendly meals for the next school year.
