I do so love it when I can make dinner from my pantry. Tonight’s menu – lentil & Canadian bacon soup.
Lentils (check), Canadian bacon (check, last of a Costco 2 pack from the freezer), veggies (check), veggie & chicken stocks (check, also the last of my homemade stocks from the freezer – time to make more!). Added bonus to tonight’s dinner – clearing some room in the freezer!!
I sure hope it isn’t hot later. That will sure take all the fun out of putting soup in the crock pot on a nice fall morning!
Lentil & Canadian Bacon Soup
32 ounces combined – homemade chicken & veggie stocks
29 ounces water
3 medium carrots, peel & cut into 1/2″ pieces
1 medium potato, peel and cut into 1/2″ pieces
½ cup chopped shallot (you can use onion if that’s all you have)
3 medium stocks celery, cut into 1/2″ pieces
16 ounce dried lentils, sorted & rinsed
6 ounce Canadian bacon, coarsely chopped
Mix all ingredients in crock pot, set on low – cook 8-9 hours until lentils are tender
Stir well before serving
