Mini Pizza Bites

I tried out a recipe for mini pizza bites that were a hit with the family. They turned out great and my non-tomato loving child has finally become accustom to eating things with tomato sauce.

Don’t feel like you have make dough from scratch. Any kind of pizza dough can be used for this – boxed mix, ready made refrigerated dough, or even stopping by your favorite pizza joint and asking to buy a ball of pizza dough.

Mini Pizza Bites

1 package ready made dough (though I actually made mine from scratch)
1 cup pizza sauce
1 cup shredded cheese (your choice of flavor – I of course am using dairy free)
16 pepperoni slices

Pre-heat oven to 350′
Roll dough out into a 10×13″ rectangle
Cut 3″ circles with a biscuit cutter
Spray muffin tin with non-stick spray
Press each circle into a muffin tin and bake 10-15 minutes or until golden
Remove from oven
Top with sauce, cheese and one slice of pepperoni
Increase oven temperature to 400′ – place in oven and bake 5-10 minute or until cheese is bubbly and crust is crisp
