Last summer I went crazy and purchased a full flat of strawberries from my favorite strawberry farmer. The primary goal of this purchase was to make my new savory strawberry salad. Do you have anything that you go crazy on and purchase a lot of when they’re in season? I have also been known to do this with stone fruits: peaches, nectarines, plums…
For this batch of strawberries I sliced some in half and froze. Some I pureed and froze in 1 cup portions to use for strawberry lemonade (my favorite lemonade recipe is in my cookbook, do you have a copy yet?). Some were obviously eaten by themselves, and the others were made into this savory strawberry salad.
I hope you enjoy this recipe. We did and I can not wait to make this again now that strawberry season is here again on the Central Coast.
Savory Strawberry Salad
2 lbs. fresh strawberries
2 cups pitted cherries
8 basil leaves, sliced thin
2 tbsp. honey
4 tbsp. white peach balsamic vinegar
1 tbsp. lemon juice
- Wash strawberries, pat dry, quarter
- Place in a medium bowl
- Sprinkle sliced basil over strawberries
- Whisk honey, balsamic vinegar and lemon juice
- Pour over strawberries
- Let sit 10 minutes before serving
