Lemon Vinaigrette
There are never enough salads in my world, and certainly not enough great dressings for all the wonderful salads. Maybe it is a California thing, but we really like salad and take salad eating very seriously. There is no reason why you should not make your own salad dressing at home. They are easy to make and healthier if you make them from scratch. I think you’ll enjoy the both the taste and the ease of making this homemade lemon vinaigrette.

Lemon Vinaigrette
Juice of 1 lemon
¼ tsp. lemon zest
½ cup olive oil
½ tsp. kosher salt
Fresh ground black pepper
- Add lemon juice, salt and black pepper to a bowl
- Slowly whisk in olive oil, keep whisking the entire time
- Whisk for about 5 minutes or until the vinaigrette begins to thicken
- Add a bit more oil if the dressing does not thicken after 5 minutes
