Pan Fried Polenta
This is one of my favorite fast meals to make on a busy school night. You can doctor this up with anything you like, but I like to keep it simple. My family really likes this pan fried polenta.
Pan Fried Polenta
1 tube ready made polenta
Marinara sauce
Dairy-free mozzarella cheese
Kosher salt to taste
Olive oil
- Slice polenta into ¼” thick circles
- Heat oil in pan over medium-high heat
- Fry polenta slices until they are golden brown on both sides
- Remove from pan, place on paper towel lined plate to rest
- Sprinkle with kosher salt to taste
- While polenta is frying heat marinara sauce in a small sauce pot
- To serve, place fried polenta on a plate, top with dairy-free mozzarella and marinara sauce
- Serve while hot
