Fast School Night Tacos
The first Tuesday night of the month were always crazed at our house. After the kiddo walked home from school, it was straight to homework, grab a quick dinner, then off to 4H. Thankfully this year she has decided to cut back on activities, so no 4H anymore, but instead her after school activities include clubs and sports. I typically do not have much time to put into cooking dinner on these nights, which usually means I am reheating something that I have already cooked. More often than not, that means making tacos. I hope you enjoy my recipe for fast school night tacos.
Fast School Night Tacos
3 cups left over or store bought rotisserie chicken
1 can chili verde sauce
1 can re-fried beans
½ cup white onion, diced
Sliced black olives
Shredded cabbage
Dairy-free cheddar cheese shreds
Gluten-free corn tortillas
- Saute chicken in pan to re-heat
- Once chicken is heated, add in chili verde sauce, warm all the way
- Heat re-fried beans in small pot and add in diced onion, stir to combine
- Warm corn tortillas on stove top
- Build tacos with a thin layer of beans, chicken, dairy-free cheese, cabbage, and olive
