Ingredients
5
eggs – beaten
1
cup
plain non-dairy milk
unsweetened if you can find it
3
tbsp.
gluten free pancake mix
5
ounces
grated dairy free mozzarella
6
ounces
chopped deli lunch ham
¼
white onion – diced
2
large handfuls fresh spinach – rough chopped
1
tbsp.
no-salt blend
½
tsp.
black pepper
Instructions
Pre-heat oven to 350’
Spray a 9x11 glass baking dish with non-stick spray
Gently fold all ingredients together
Pour into prepped baking dish
Bake 35-50 minutes, when a toothpick comes out clean it is done
Slice and eat immediately, or later
